Taco Bell Enchirito (Copycat Recipe)

Ingredients (Makes 6 Enchiritos)

For the Seasoned Beef

  • 1 lb ground beef
  • 1 cup water
  • 2 tablespoons taco seasoning (store-bought or homemade)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon salt

For the Filling

  • 1 cup refried beans
  • 6 small flour tortillas (about 6-inch size)
  • ½ cup diced white onion
  • 1 ½ cups shredded cheddar cheese or cheddar-jack blend

For the Red Enchilada Sauce

  • 1 (10 oz) can red enchilada sauce
  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon sugar
  • Pinch of salt (optional)

Instructions

1. Prepare the Seasoned Beef

  1. In a skillet, cook ground beef over medium heat until browned.
  2. Drain excess grease.
  3. Add taco seasoning, garlic powder, onion powder, paprika, salt, and water.
  4. Simmer for 5–7 minutes until thickened.

2. Warm the Refried Beans

  • Heat refried beans in a small saucepan with a splash of water until smooth and spreadable.

3. Prepare the Red Sauce

  1. Pour enchilada sauce into a small pot.
  2. Add cumin, chili powder, and sugar.
  3. Simmer on low for 5 minutes to thicken slightly.

4. Assemble the Enchiritos

  1. Warm tortillas in the microwave or on a dry pan until soft.
  2. Spread 2 tablespoons refried beans down the center of each tortilla.
  3. Add a spoonful of seasoned beef.
  4. Sprinkle a teaspoon of diced onions over the beef.
  5. Roll the tortilla tightly like a burrito.

5. Top and Melt

  1. Place rolled tortillas seam-side down in a baking dish or on plates.
  2. Pour warm red sauce over the top.
  3. Sprinkle generously with shredded cheese.
  4. Microwave each serving for 30–45 seconds or place under a broiler for 1–2 minutes until cheese melts.

Tips

  • For a more authentic Taco Bell flavor, use finely shredded cheddar.
  • Add black olives if you remember the older version Taco Bell used to serve.
  • Warm the tortillas well to avoid tearing.
  • Make the dish spicier by adding a little hot sauce to the beef or red sauce.
