Here’s a simple, classic chicken croquette recipe—crispy outside, tender inside. I’ll give you both a traditional version and a lighter, baked option.


🍗 Chicken Croquettes (Classic)

Ingredients (Makes 10–12 croquettes)

  • 2 cups cooked chicken, finely chopped or shredded
  • 1 small onion, finely diced
  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour
  • ¾ cup milk or chicken broth
  • 1 Tbsp parsley, chopped (optional)
  • ½ tsp black pepper
  • ½ tsp salt (adjust as needed)
  • 1 egg, beaten
  • 1–1¼ cups breadcrumbs
  • Oil for frying (or baking instructions below)

Instructions

1. Make the Filling

  1. In a pan, melt butter over medium heat.
  2. Add onion and cook until soft (3–5 minutes).
  3. Stir in flour and cook for 1 minute to form a paste.
  4. Slowly add milk/broth, whisking until thick like gravy.
  5. Remove from heat and stir in chicken, parsley, salt, and pepper.
  6. Let cool completely (chilling 1 hour makes shaping easier).

2. Shape and Coat

  1. Shape into small logs or balls.
  2. Dip each croquette into the beaten egg.
  3. Roll in breadcrumbs to coat.

3. Cook

Pan-Fry (Traditional)

  • Heat oil in a skillet over medium heat.
  • Fry croquettes 3–4 minutes per side until golden.

Bake (Lighter Option)

  • Preheat oven to 400°F (200°C).
  • Brush croquettes lightly with oil.
  • Bake 18–22 minutes, turning halfway.

⭐ Tips

  • For extra creaminess: add 2 tablespoons of cream cheese to the filling.
  • For extra crispiness: use panko breadcrumbs.
  • To freeze: shape, bread, and freeze on a tray, then store in a bag. Fry/bake straight from frozen.
