Ingredients (Serves 2–3)

For the Chicken Stir-Fry

  • 1 lb chicken breast or thighs, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small green bell pepper, sliced
  • 1 small onion, sliced
  • 3–4 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional but recommended)
  • 1 tsp sesame oil
  • 1 tbsp vegetable oil
  • ½ tsp ground black pepper
  • ½ tsp red chili flakes (optional)
  • 1 tsp cornstarch + 2 tbsp water (slurry, optional for thicker sauce)

For the Steamed Rice

  • 1 cup long-grain rice
  • 2 cups water
  • Pinch salt

Instructions

1. Cook the Rice

  1. Rinse rice under cold water until water runs clear.
  2. Combine rice, water, and salt in a pot.
  3. Bring to a boil, then reduce to a simmer, cover, and cook 15–18 minutes.
  4. Remove from heat, let sit covered 5 minutes, then fluff with a fork.

2. Prepare the Chicken

  1. Pat chicken slices dry and season lightly with black pepper.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add chicken and stir-fry 4–5 minutes, until lightly browned and cooked through. Remove and set aside.

3. Stir-Fry the Vegetables

  1. In the same skillet, add a touch more oil if needed.
  2. Add minced garlic and stir for 30 seconds until fragrant.
  3. Add bell peppers and onion; stir-fry 3–4 minutes until crisp-tender.

4. Combine Chicken & Sauce

  1. Return chicken to the skillet.
  2. Add soy sauce, oyster sauce, sesame oil, and chili flakes.
  3. Stir well to coat everything evenly.
  4. If you want a thicker sauce, stir in cornstarch slurry and cook 1–2 minutes until sauce thickens.

5. Serve

  • Plate steamed rice and top with the sizzling garlic chicken stir-fry.
  • Optional garnish: sesame seeds, chopped green onions, or extra chili flakes.

Tips

  • For extra sizzle: Preheat your skillet until very hot before adding oil.
  • Vegetable variations: Snow peas, broccoli, or zucchini work well.
  • Marinade option: Marinate chicken in 1 tbsp soy sauce + ½ tsp cornstarch for 10 minutes for even juicier bites.
