Instructions:

  1. Prepare the fruit:
    In a medium saucepan, combine cranberries, chopped apples, orange juice, and water. Cook over medium heat until the fruit begins to soften (about 10 minutes).
  2. Add sugar and spices:
    Stir in sugar, orange zest, cinnamon, ginger, cloves, and nutmeg. Continue to cook, stirring occasionally, until the mixture thickens and the fruit breaks down (about 15–20 minutes).
  3. Check consistency:
    To test, place a small spoonful on a chilled plate. If it wrinkles when pushed with your finger, it’s ready. If not, cook a few more minutes.
  4. Add vanilla:
    Remove from heat and stir in the vanilla extract.
  5. Jar the jam:
    Carefully pour the hot jam into sterilized jars, leaving ¼ inch of space at the top. Seal immediately.
  6. Cool and store:
    Let jars cool to room temperature, then store in the refrigerator for up to 3 weeks, or process in a water bath for long-term storage.
