Frozen Fruit Salad

A refreshing and cool treat, Frozen Fruit Salad is a perfect way to enjoy fruit with a creamy twist. It’s an easy, no-bake dessert or side dish that’s great for summer gatherings, potlucks, or anytime you want something sweet and light. It’s packed with flavor, colorful fruits, and a creamy, dreamy texture!


Ingredients:

  • 1 cup diced pineapple (fresh or canned, drained)

  • 1 cup diced strawberries (fresh or frozen, thawed)

  • 1 cup grapes (red or green, halved)

  • 1 banana, sliced

  • 1/2 cup chopped apples (optional)

  • 1/2 cup mini marshmallows

  • 1 cup whipped topping (like Cool Whip)

  • 1/2 cup Greek yogurt or sour cream (for tang and creaminess)

  • 1/4 cup honey or sweetened condensed milk (optional, for sweetness)

  • 1/4 tsp vanilla extract (optional)

  • A pinch of salt (to balance the sweetness)


Instructions:

  1. Prepare the Fruit:

    • Wash and chop the fruit as needed (pineapple, strawberries, grapes, banana, apples). You can also use frozen fruit, just be sure to thaw it first and drain any excess liquid.

  2. Mix the Dressing:

    • In a large bowl, combine the whipped topping, Greek yogurt or sour cream, honey or sweetened condensed milk (if using), and vanilla extract. Stir everything together until smooth and creamy. Taste and adjust sweetness if needed by adding a little more honey or sweetened condensed milk.

  3. Combine the Fruit:

    • Gently fold the prepared fruit into the creamy mixture. Add in the mini marshmallows and stir everything together until well-coated.

  4. Freeze:

    • Pour the mixture into a freezer-safe dish (a 9×9-inch pan or a large serving bowl works well). Smooth out the top and cover it with plastic wrap or a lid.

    • Freeze for at least 4-6 hours, or until the salad is firm and frozen through.

  5. Serve:

    • Once frozen, remove the fruit salad from the freezer and let it sit at room temperature for about 5-10 minutes before serving to soften slightly.

    • Scoop out portions and serve immediately. You can garnish with extra fruit or a sprinkle of shredded coconut for extra flair!


Optional Variations:

  • Add-ins: Try adding nuts like chopped pecans, walnuts, or sliced almonds for some crunch. You could also fold in some coconut flakes or a handful of dried cranberries.

  • Swap the yogurt: For a richer version, you can swap the Greek yogurt or sour cream for cream cheese. This will make it extra creamy.

  • Tropical twist: Add diced mango or kiwi for a tropical flair.

  • Lighter version: For a lighter salad, use a sugar-free whipped topping or make your own whipped cream with heavy cream and a bit of sweetener.
