🥩 INGREDIENTS

For the Burrito Filling

  • 1 lb ground beef

  • 1 tablespoon oil

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 can (15 oz) refried beans or 1½ cups cooked pinto beans

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 teaspoon cumin

  • 1 teaspoon chili powder

  • ½ teaspoon oregano

  • 1–2 tablespoons water or broth (to soften beans)

For the Red Chile Sauce

  • 8–10 dried red chiles (New Mexico, guajillo, or ancho)

  • 2 cups chicken or beef broth

  • ¼ onion

  • 2 cloves garlic

  • ½ teaspoon salt

  • ½ teaspoon oregano

  • ½ teaspoon cumin

  • 1 tablespoon oil (for thickening)

  • 1 tablespoon flour

Assembly

  • 6–8 large flour tortillas

  • 1–2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)

  • Optional toppings: sour cream, lettuce, tomatoes, onions, avocado, cilantro


🔥 INSTRUCTIONS

1. Make the Red Chile Sauce

  1. Remove stems & seeds from dried chiles.

  2. Boil chiles in water for 10 minutes until soft.

  3. Drain and blend chiles with:

    • broth

    • onion

    • garlic

    • salt

    • oregano

    • cumin
      until completely smooth.

  4. In a saucepan, heat oil, then stir in flour to form a light roux.

  5. Add chile puree and simmer 10–15 minutes until thickened and deep red.

(If needed, strain for an ultra-smooth sauce.)


2. Make the Beef & Bean Filling

  1. Heat oil in a skillet. Sauté onions until soft.

  2. Add ground beef and cook until browned.

  3. Add garlic, salt, pepper, cumin, chili powder, oregano. Stir well.

  4. Add refried beans and a splash of broth or water to soften.

  5. Let everything simmer 5 minutes until creamy and combined.


3. Assemble the Burritos

  1. Warm tortillas.

  2. Add a scoop of beef & bean mixture down the center.

  3. Top with shredded cheese.

  4. Roll tightly: sides in, then roll forward.


4. Smother with Red Chile Sauce

Place burritos seam-side down in a baking dish.
Pour red chile sauce over the top.
Sprinkle extra cheese if you like!

Bake at 350°F for 10–15 minutes until warmed through and melty.
