Homemade Pumpkin Pie

Ingredients (8 servings)

For the Crust

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold and cut into cubes
  • 2–4 tablespoons ice water

For the Filling

  • 1 (15 oz) can pumpkin puree (or 2 cups homemade pumpkin puree)
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs
  • 1 (12 fl oz) can evaporated milk (or 1 1/4 cups heavy cream)

Instructions

1. Prepare the Crust

  1. In a large bowl, combine flour and salt.
  2. Cut in cold butter using a pastry cutter or your fingers until mixture resembles coarse crumbs.
  3. Add ice water, one tablespoon at a time, until dough comes together.
  4. Shape into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  5. Roll out dough on a floured surface and fit it into a 9-inch pie pan. Trim and crimp the edges.

2. Prepare the Filling

  1. In a large bowl, whisk together pumpkin puree, sugar, salt, cinnamon, ginger, cloves, and nutmeg.
  2. Beat in eggs until smooth.
  3. Gradually stir in evaporated milk or cream until fully combined.

3. Assemble and Bake

  1. Preheat oven to 425°F (220°C).
  2. Pour filling into prepared pie crust.
  3. Bake for 15 minutes, then reduce oven temperature to 350°F (175°C) and bake an additional 40–50 minutes, or until a knife inserted near the center comes out clean.

4. Cool and Serve

  • Allow the pie to cool to room temperature, then refrigerate for at least 2 hours before serving.
  • Serve with whipped cream if desired.

Tips

  • For extra flaky crust, keep butter and water cold throughout preparation.
  • Avoid overbaking to prevent cracks in the filling.
  • Use a spice blend or pumpkin pie spice instead of individual spices for convenience.
  • Homemade pumpkin puree can be made by roasting pumpkin chunks until tender and blending until smooth.
