Cheesy Meatloaf

This Cheesy Meatloaf combines the classic comfort of a traditional meatloaf with the irresistible goodness of melted cheese. The gooey cheese adds moisture and richness, making the meatloaf extra juicy and flavorful. Whether you’re making it for a family dinner or a special occasion, this cheesy meatloaf is sure to impress!


Ingredients:

For the Meatloaf:
  • 1 lb ground beef (or a mix of beef and pork)

  • 1/2 cup breadcrumbs (preferably panko for extra texture)

  • 1/4 cup milk

  • 1 egg

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1/2 cup shredded cheddar cheese (or your favorite cheese like mozzarella or Monterey Jack)

  • 1 tsp dried Italian seasoning (optional)

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 tsp smoked paprika (optional, for extra flavor)

  • 1/4 tsp onion powder (optional)

  • 2 tbsp fresh parsley, chopped (for garnish)

For the Glaze:
  • 1/4 cup ketchup

  • 1 tbsp brown sugar

  • 1 tbsp Dijon mustard (or yellow mustard)

  • 1 tbsp Worcestershire sauce


Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C) and lightly grease a loaf pan or line it with parchment paper for easy cleanup.

  2. Prepare the Meatloaf Mixture:

    • In a large mixing bowl, combine the ground beef (or beef and pork mix), breadcrumbs, milk, egg, chopped onion, minced garlic, shredded cheese, Italian seasoning, salt, pepper, paprika, and onion powder (if using).

    • Mix everything together until just combined. Be careful not to overmix, as this can make the meatloaf dense.

  3. Shape the Meatloaf:

    • Transfer the meat mixture into the prepared loaf pan. If you prefer a crustier exterior, you can also shape the meat mixture into a loaf and place it on a lined baking sheet.

  4. Make the Glaze:

    • In a small bowl, whisk together the ketchup, brown sugar, mustard, and Worcestershire sauce to make the glaze.

  5. Top the Meatloaf:

    • Brush the glaze generously over the top of the meatloaf. Use a basting brush or the back of a spoon to spread the glaze evenly across the top and sides of the meatloaf.

  6. Bake the Meatloaf:

    • Place the meatloaf in the preheated oven and bake for 45-55 minutes, or until the meatloaf is fully cooked and the internal temperature reaches 160°F (71°C). If using a loaf pan, you can check doneness by inserting a thermometer in the center. If you prefer a crispy crust, you can broil the meatloaf for the last 2-3 minutes of baking.

  7. Add Extra Cheese (Optional):

    • For extra cheesy goodness, sprinkle additional shredded cheese (cheddar, mozzarella, or a blend) on top of the meatloaf about 5 minutes before it’s done baking. Let the cheese melt and get bubbly.

  8. Rest the Meatloaf:

    • Once baked, remove the meatloaf from the oven and let it rest for about 5-10 minutes before slicing. This helps the juices redistribute, making it juicier and easier to slice.

  9. Serve:

    • Slice and serve your cheesy meatloaf with mashed potatoes, steamed vegetables, or a fresh salad. Garnish with chopped parsley for a pop of color.

  • Make Ahead: You can prepare the meatloaf ahead of time and store it in the fridge for up to a day before baking. This can help the flavors meld together.

  • Glaze Variations: Add hot sauce, sriracha, or BBQ sauce to the glaze for a spicy or smoky kick.
