Fideo con Pollo is a comforting and flavorful Mexican dish that combines fideo noodles (thin pasta) with tender chicken, tomatoes, and aromatic seasonings in a rich broth. It’s perfect for a cozy meal, offering a warm, hearty option that’s light yet filling. This dish is simple to make, packed with flavor, and great for any occasion — from family dinners to casual get-togethers.


Ingredients:

  • For the Chicken and Broth:

    • 2-3 bone-in chicken breasts or thighs (about 1 1/2 lbs)

    • 1 onion, halved

    • 2 cloves garlic, smashed

    • 1 bay leaf

    • Salt and pepper, to taste

    • 8 cups chicken broth (or water, plus 2 bouillon cubes for flavor)

  • For the Fideo (Noodles):

    • 1 tbsp vegetable oil or olive oil

    • 2 cups fideo noodles (or other small pasta like angel hair, broken into small pieces)

    • 1/2 tsp ground cumin

    • 1 tsp chili powder (optional, for heat)

    • 1 can (14.5 oz) diced tomatoes (or 2 medium fresh tomatoes, chopped)

    • 1/2 cup tomato sauce

    • 1-2 cups chicken broth (from the cooked chicken or fresh)

    • 1/2 cup chopped cilantro (optional, for garnish)

    • Lime wedges (for serving)


Instructions:

  1. Cook the Chicken:

    • In a large pot, add the chicken breasts or thighs, onion halves, garlic cloves, bay leaf, and a generous pinch of salt and pepper. Cover with about 8 cups of chicken broth or water and bring to a boil.

    • Once it boils, reduce the heat to a simmer and cook for about 30-40 minutes or until the chicken is cooked through and tender. If using bone-in chicken, you may need to cook a bit longer. Skim off any foam that rises to the surface as it cooks.

    • Once the chicken is cooked, remove it from the pot, and set it aside to cool slightly. Remove and discard the onion, garlic, and bay leaf.

    • Shred the chicken using two forks or chop it into bite-sized pieces. Set aside.

  2. Toast the Fideo Noodles:

    • In a separate large skillet or pan, heat 1 tablespoon of oil over medium heat. Add the fideo noodles (or small pasta) and cook, stirring frequently, until the noodles are lightly toasted and golden brown, about 3-4 minutes.

    • Be careful not to burn the noodles, as they cook quickly.

  3. Prepare the Soup Base:

    • Add the diced tomatoes (with juice) and tomato sauce to the skillet with the toasted noodles. Stir in the cumin, chili powder (if using), and some salt and pepper to taste.

    • Pour in about 1-2 cups of chicken broth (the broth you made with the chicken or fresh), and bring it to a simmer. Let it cook for about 10-15 minutes until the noodles have softened and absorbed some of the tomato flavor.

  4. Combine the Chicken and Noodles:

    • Add the shredded chicken back into the pot with the fideo and stir to combine.

    • If you prefer a soupier dish, add a bit more chicken broth or water at this point, and bring it all back to a simmer for another 5-10 minutes, allowing the flavors to meld.

  5. Serve:

    • Ladle the Fideo con Pollo into bowls and garnish with fresh chopped cilantro (optional).

    • Serve with lime wedges on the side for squeezing over the top, adding a fresh, zesty flavor.

  • Vegetarian Option: Skip the chicken and use vegetable broth, adding extra vegetables like carrots, zucchini, and potatoes for a hearty vegetarian version.

  • Make-Ahead: This soup stores well in the fridge for 2-3 days, and the flavors deepen as it sits. Reheat with a little extra broth if needed.
