Ingredients (serves 2–4)

  • 2 cups lettuce (romaine, iceberg, or mixed greens), chopped

  • 1 cup cucumber, sliced or diced

  • 1 cup tomatoes, chopped or cherry tomatoes halved

  • 1/2 cup bell peppers, any color, thinly sliced

  • 1/4 cup red onion, thinly sliced

  • 1/2 cup carrots, shredded or julienned

  • 1/4 cup fresh herbs (parsley, cilantro, or basil), chopped

  • 2–3 tbsp olive oil

  • 1 tbsp lemon juice or vinegar

  • Salt and black pepper, to taste


Instructions

  1. Prepare Vegetables:
    Wash all vegetables thoroughly. Chop, slice, or shred as needed.

  2. Combine:
    In a large bowl, mix lettuce, cucumber, tomatoes, bell peppers, onion, and carrots.

  3. Add Dressing:
    Drizzle olive oil and lemon juice (or vinegar) over the salad. Season with salt and pepper.

  4. Toss & Serve:
    Toss gently until vegetables are evenly coated. Sprinkle fresh herbs on top for flavor and freshness. Serve immediately.

  • For extra crunch, add radishes, celery, or sprouts.

  • For mild sweetness, toss in corn kernels or thin slices of apple.

  • Serve chilled for maximum freshness.
