🍒 Classic Moist Fruitcake Recipe
Ingredients

2 cups mixed dried fruit (raisins, cherries, apricots, dates, etc.)

½ cup candied peel (optional)

½ cup chopped nuts (walnuts, pecans, or almonds)

½ cup brown sugar

½ cup butter, softened

2 large eggs

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp cinnamon

¼ tsp nutmeg
-
¼ tsp salt
-
½ cup orange juice (or apple juice / rum for soaking)

1 tsp vanilla extract
Instructions

Soak the fruit:
Mix dried fruit with orange juice and let sit for 30 minutes (or overnight for richer flavor). -
Cream butter & sugar:
Beat butter and brown sugar until fluffy. -
Add eggs one at a time, then mix in vanilla.

Combine dry ingredients:
In another bowl, mix flour, baking powder, salt, cinnamon, and nutmeg. -
Mix batter:
Add dry ingredients to the wet mixture. Fold in soaked fruit (with any remaining liquid) and nuts. -
Bake:

Preheat oven to 325°F (160°C).

Pour into a greased loaf pan.

Bake 70–90 minutes, or until a toothpick comes out clean.

Cool completely, wrap tightly, and brush with rum or brandy every few days. This deepens the flavor and keeps it moist.
