Here’s a classic fruitcake recipe—simple, moist, and packed with fruit flavor. If you want a shortcut or a no-bake version, just let me know!


🍒 Classic Moist Fruitcake Recipe

Ingredients

  • 2 cups mixed dried fruit (raisins, cherries, apricots, dates, etc.)

  • ½ cup candied peel (optional)

  • ½ cup chopped nuts (walnuts, pecans, or almonds)

  • ½ cup brown sugar

  • ½ cup butter, softened

  • 2 large eggs

  • 1 ½ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp cinnamon

  • ¼ tsp nutmeg

  • ¼ tsp salt

  • ½ cup orange juice (or apple juice / rum for soaking)

  • 1 tsp vanilla extract


Instructions

  1. Soak the fruit:
    Mix dried fruit with orange juice and let sit for 30 minutes (or overnight for richer flavor).

  2. Cream butter & sugar:
    Beat butter and brown sugar until fluffy.

  3. Add eggs one at a time, then mix in vanilla.

  4. Combine dry ingredients:
    In another bowl, mix flour, baking powder, salt, cinnamon, and nutmeg.

  5. Mix batter:
    Add dry ingredients to the wet mixture. Fold in soaked fruit (with any remaining liquid) and nuts.

  6. Bake:

    • Preheat oven to 325°F (160°C).

    • Pour into a greased loaf pan.

    • Bake 70–90 minutes, or until a toothpick comes out clean.

  7. Optional: Age the cake
    Cool completely, wrap tightly, and brush with rum or brandy every few days. This deepens the flavor and keeps it moist.
