Ingredients

For the Cake

  • 1 ½ cups unsalted butter, softened
  • 8 oz cream cheese, softened
  • 3 cups granulated sugar
  • 6 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • ½ teaspoon almond extract (optional, but enhances strawberry flavor)
  • 3 cups all-purpose flour
  • ½ teaspoon salt
  • 1 cup finely chopped fresh strawberries (patted dry)
  • 2 tablespoons flour (to toss with strawberries)

For the Strawberry Glaze (Optional)

  • 1 cup powdered sugar
  • 2–3 tablespoons pureed strawberries or strawberry jam
  • ½ teaspoon vanilla extract

Instructions

1. Prepare the Pan and Oven

  1. Preheat oven to 325°F (165°C).
  2. Grease and flour a 10-inch bundt pan or tube pan thoroughly.

2. Make the Batter

Cream the Butter, Cream Cheese, and Sugar

  1. In a large bowl, beat butter and cream cheese until smooth and creamy.
  2. Add sugar and beat 3–4 minutes until light and fluffy.

Add Eggs and Flavorings

  1. Add eggs one at a time, mixing well after each addition.
  2. Mix in vanilla and almond extract.

Add Dry Ingredients

  1. In a separate bowl, whisk flour and salt.
  2. Gradually mix dry ingredients into the wet batter on low speed until just combined.
  3. Do not overmix.

3. Add the Strawberries

  1. Toss chopped strawberries with 2 tablespoons flour (prevents sinking).
  2. Gently fold strawberries into the batter.

4. Bake

  1. Spoon batter into prepared pan and smooth the top.
  2. Bake for 70–85 minutes, or until a toothpick comes out clean.
  3. Cool in the pan for 15 minutes, then turn onto a wire rack to finish cooling.

Strawberry Glaze (Optional)

  1. Mix powdered sugar, strawberry puree (or jam), and vanilla until smooth.
  2. Adjust thickness with more sugar or more puree.
  3. Drizzle over the cooled cake.

Tips

  • Make sure butter, cream cheese, and eggs are room temperature for a smooth batter.
  • Pat strawberries very dry to avoid adding extra moisture.
  • Cake improves in flavor the next day; wrap and store overnight for best results.
  • You can substitute strawberries with blueberries or raspberries.
