Mint Chocolate Cheesecake Cake Recipe

Ingredients:

Chocolate Cake Layer:

  • 1 ¾ cups (220g) all-purpose flour

  • ¾ cup (75g) cocoa powder

  • 1 ½ tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • 1 cup (200g) sugar

  • ½ cup (120ml) vegetable oil

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 cup (240ml) buttermilk

  • ½ cup (120ml) hot water

Mint Cheesecake Layer:

  • 16 oz (450g) cream cheese, softened

  • ½ cup (100g) sugar

  • 2 large eggs

  • ½ tsp peppermint extract

  • ¼ cup (60ml) heavy cream

  • Green food coloring (optional)

Chocolate Ganache (optional):

  • ½ cup (120ml) heavy cream

  • ½ cup (90g) chocolate chips


Instructions:

1. Make the Chocolate Cake:

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch (20cm) round cake pans.

  2. In a bowl, mix flour, cocoa powder, baking powder, baking soda, and salt.

  3. In another bowl, whisk together sugar, oil, eggs, and vanilla until smooth.

  4. Add dry ingredients alternately with buttermilk, starting and ending with dry ingredients. Stir in hot water until smooth.

  5. Divide batter between pans and bake 25–30 minutes. Cool completely.

2. Make the Mint Cheesecake Layer:

  1. Beat cream cheese and sugar until smooth.

  2. Add eggs one at a time, then peppermint extract and heavy cream. Add food coloring if desired.

  3. Pour over one of the cooled chocolate cakes. Bake at 325°F (160°C) for 25–30 minutes or until set. Cool completely.

3. Assemble the Cake:

  1. Place cheesecake-layered cake on a serving plate. Top with the second chocolate cake layer.

  2. Optional: Pour chocolate ganache over the top and let drip down the sides.

4. Chill & Serve:

  • Refrigerate for at least 2 hours before slicing. Garnish with mint leaves or chocolate shavings if desired.
