Here’s a simple, fast, and ultra-flavorful recipe for Mongolian Ground Beef Noodles — the kind you can get on the table in about 20 minutes.

🌟 Mongolian Ground Beef Noodles

Ingredients

For the noodles & beef:

  • 8 oz lo mein noodles, spaghetti, or ramen

  • 1 lb ground beef

  • 1 tbsp oil

  • 3–4 garlic cloves, minced

  • 1 tsp ginger, grated (or ½ tsp ground ginger)

  • 1 cup shredded carrots (optional)

  • 1–2 green onions, sliced

For the Mongolian sauce:

  • ½ cup soy sauce

  • ⅓ cup brown sugar

  • 1 tbsp hoisin sauce (optional but great)

  • 1 tbsp cornstarch

  • ½ cup water or beef broth

  • ½–1 tsp red pepper flakes (optional)


Instructions

  1. Cook the noodles according to the package. Drain and set aside.

  2. In a large pan, brown the ground beef in a little oil. Drain excess fat if needed.

  3. Add garlic and ginger, sauté 1 minute until fragrant.

  4. Stir in carrots if using and cook for 2–3 minutes.

  5. In a bowl, whisk together the soy sauce, brown sugar, hoisin, cornstarch, and water/broth.

  6. Pour the sauce into the beef and simmer until it thickens (1–2 minutes).

  7. Add the cooked noodles and toss until fully coated in the glossy sauce.

  8. Top with green onions, and serve!

  • Add broccoli, snap peas, or cabbage to make it heartier.

  • Swap beef for ground turkey or chicken.

  • For extra richness, stir in a teaspoon of sesame oil at the end.

  • For spice lovers: add sambal oelek or sriracha.
