(It’s basically a mug cake or quick microwave mini-cake.)
⭐ 5-Minute No-Flour, No-Sugar Coconut Cake
Ingredients (1–2 servings)
- 1 large egg
- 2 tbsp unsweetened shredded coconut
- 2 tbsp coconut milk (or any milk)
- 1–2 tbsp unsweetened applesauce OR mashed banana (for natural sweetness)
- 1 tbsp coconut oil, melted
- ½ tsp vanilla extract
- ¼ tsp baking powder
- Pinch salt
- Optional: a few drops stevia, monk fruit, or a sprinkle of cinnamon
Instructions
- Grease a microwave-safe mug or small bowl.
- Mix all ingredients directly in the mug until smooth.
- Microwave on HIGH for 1 minute 30 seconds to 2 minutes,
depending on your microwave. - Let stand for 30 seconds to set.
- Enjoy warm, or invert onto a plate.
