1 lb ground beef (or chicken, pork, or beans for a vegetarian version)
-
1 medium onion, diced
-
2 cloves garlic, minced
-
1 packet (1 oz) taco seasoning (or homemade seasoning)
-
1/2 cup water (or beef/chicken broth)
-
1 can (4 oz) diced green chilies (optional, for heat)
-
1/2 cup cooked rice (optional, for extra filling)
-
1 cup shredded cheddar cheese (or a blend of Mexican cheeses)
-
-
For the Wet Burrito:
-
4 large flour tortillas (10-inch)
-
2 cups enchilada sauce (red or green)
-
1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
-
Sour cream (optional, for garnish)
-
Chopped cilantro (optional, for garnish)
-
Sliced jalapeños (optional, for heat)
-
Chopped onions or green onions (optional, for garnish)
-
Instructions:
-
Prepare the Filling:
-
In a large skillet, cook the ground beef over medium-high heat, breaking it up with a spatula as it cooks. Cook until browned, about 5-7 minutes.
-
Add the onion and garlic, and cook until softened, about 3-4 minutes.
-
Stir in the taco seasoning and water (or broth), and cook for 2-3 minutes, until the mixture is well combined and the sauce thickens. If using, add the green chilies and cooked rice to the mixture and stir well.
-
Remove the skillet from heat, and set aside.
-
-
Assemble the Burritos:
-
Preheat your oven to 375°F (190°C).
-
Place a tortilla flat on a clean surface. Add about 1/4 to 1/3 cup of the filling in the center of the tortilla, then sprinkle with shredded cheese.
-
Fold the sides of the tortilla in towards the center, then roll it up from the bottom to form a burrito. Repeat with the remaining tortillas and filling.
-
-
Smother the Burritos:
-
In a baking dish (9×13-inch works well), spread a thin layer of enchilada sauce on the bottom to prevent sticking.
-
Place the assembled burritos seam-side down in the dish.
-
Pour the remaining enchilada sauce evenly over the top of the burritos, ensuring that each one is fully covered with sauce.
-
Sprinkle the shredded cheese on top of the sauce-covered burritos.
-
-
Bake:
-
Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted, bubbly, and golden brown.
-
Remove from the oven and let cool for 5 minutes before serving.
-
-
Serve:
-
Serve the wet burritos with a dollop of sour cream, a sprinkle of cilantro, and any other toppings like sliced jalapeños, chopped onions, or even a side of guacamole or salsa.
-
Tips & Variations:
-
Make it Vegetarian: Use black beans or refried beans in place of the meat for a vegetarian version. You can also add sautéed vegetables like bell peppers, zucchini, and corn to the filling for extra flavor and texture.
-
Add a Kick: If you want more heat, add sliced jalapeños or a dash of hot sauce to the filling or the sauce before baking.
-
Use Homemade Enchilada Sauce: If you have the time, you can make your own enchilada sauce for a fresher, more customized flavor.
-
Add Rice and Beans: If you like your burritos more substantial, add rice and beans (black, pinto, or refried) to the filling.
-
Extra Toppings: For more variety, top the burritos with sliced olives, chopped green onions, or even shredded lettuce for added crunch.
Serving Suggestions:
-
Side Dishes: Serve wet burritos with sides like Mexican rice, refried beans, chips and salsa, or a fresh salad with lime dressing.
